Alergia a la carne roja

¿Qué es la alergia a la carne roja?
La alergia a la carne roja es una alergia alimentaria que puede ocurrir tras la picadura de una garrapata. Algunas garrapatas trasmiten una diminuta partícula llamada alfa-gal a la sangre. Esto puede hacer que el sistema inmunitario de una persona reaccione de forma exagerada a las proteínas de la carne roja y a los productos elaborados con animales mamíferos. El cuerpo interpreta que esas proteínas son invasores dañinos, por lo que intenta combatirlos. Esto puede causar una reacción alérgica.
¿Qué puede desencadenar una reacción alérgica a la carne roja?
Una reacción alérgica a la carne roja y a los productos elaborados con mamíferos puede desencadenarse al comer o beber cosas que contengan alfa-gal, como:
- la carne de res (vaca), el cerdo, el cordero, la cabra, el ciervo o el búfalo (estos alimentos se presentan a veces en forma de perritos calientes o de hamburguesas)
- alimentos sólidos y bebidas elaborados con mamíferos, como la gelatina, la manteca de cerdo, la leche de vaca u otros productos lácteos (incluidos el yogur y el helado)
- el carragenano, un ingrediente que proviene de las algas rojas y que puede encontrarse en productos como la pasta de dientes y la leche en polvo para bebés
Tomar medicamentos recubiertos de gelatina también puede desencadenar una reacción alérgica.
Algunas personas alérgicas a la carne roja deben evitar los productos cárnicos, pero no tienen problemas en consumir otros productos que contengan una menor cantidad de alfa-gal. Hay otras personas que necesitan evitar cualquier cosa que contenga hasta una cantidad ínfima de alfa-gal.
¿Cuáles son los signos y los síntomas de la alergia a la carne roja?
Cuando una persona alérgica a la carne roja come carne roja o algo elaborado con mamíferos, su cuerpo libera sustancias químicas como histamina. Esto puede causar que sus síntomas comiencen entre 2 y 6 horas después, como:
- dificultades para respirar o tos
- erupción en la piel asociada a picazón, ronchas o urticaria
- dolor de estómago, molestias abdominales, náuseas, vómitos o diarrea
- párpados, labios, lengua y/o garganta hinchados
- bajada de la tensión arterial que causa mareos o desmayos
Los niños alérgicos no siempre tienen una reacción cuando comen carne roja o algo elaborado con mamíferos. Pero si la tienen, sus reacciones pueden variar. Algunas reacciones son leves y afectan a una sola parte del cuerpo (como una urticaria en la piel). Pero la siguiente reacción puede ser grave, y recibirá el nombre de anafilaxia. La anafilaxia puede empezar con algunos de los síntomas propios de una reacción alérgica menos grave, pero empeora rápidamente. Los niños pueden tener dificultades para respirar o llegarse a desmayar. En una anafilaxia, siempre está afectada más de una parte del cuerpo. Las anafilaxias que no se tratan pueden ser de riesgo vital.
¿Cómo se diagnostica la alergia a la carne roja?
Si cree que su hijo puede ser alérgico a la carne roja, consulte a su médico. Le preguntarán por sus síntomas y es posible que lo exploren y que le pidan análisis de sangre. Es posible que su hijo necesite visitar a un alergólogo, que le puede hacer más pruebas para comprobar si es alérgico y hablar sobre lo que debería evitar.
¿Cómo se tratan las reacciones alérgicas a la carne roja?
Si alguien tiene alergia a la carne roja, es probable que el alergólogo le recete un medicamento llamado autoinyector de adrenalina (o epinefrina). Es fácil de usar, y se utiliza ante la reacciones graves. Haga que su hijo lleve siempre encima dos autoinyectores. Algunas reacciones alérgicas requerirán ambas inyecciones.
Si su hijo empieza a tener síntomas de una reacción alérgica grave, como dificultades para respirar, use el autoinyector de adrenalina de inmediato. Póngaselo también si los síntomas que presenta su hijo afectan a más de una parte del cuerpo, como urticaria sumada a vómitos. A continuación, llame al 911 para pedir una ambulancia a fin de que atiendan a tu hijo de camino a un servicio de urgencias médicas. Esta atención médica es necesaria porque podría haber una segunda oleada de síntomas graves.
¿Cómo pueden ayudar los padres?
Si su hijo es alérgico a la carne roja:
- Ayude a su hijo a evitar el consumo de carne roja. Hable con el médico para saber qué productos debe evitar su hijo.
- Lea todas las etiquetas alimentarias atentamente. Los ingredientes pueden cambiar.
- Evite la contaminación cruzada. Algunos alimentos parecen seguros para el consumo basándose en sus listados de ingredientes, pero durante su proceso de fabricación pueden entrar en contacto con (o tocar) productos que contengan alfa-gal. Esto se llama "contaminación cruzada". Cualquier persona que prepare la comida de su hijo debe lavarse las manos con agua y jabón antes de tocarla. Y su hijo se debe lavar siempre las manos antes de comer.
- Considere la posibilidad de preparar almuerzos caseros para su hijo. Así no tendrá que preguntarse si un almuerzo escolar contiene algo que podría desencadenar una reacción alérgica en su hijo.
- Tenga cuidado cuando coman fuera o pidan comida a domicilio. Pida al encargado del restaurante que le confirme lo que contiene cada plato. No pida comida para su hijo si esa persona parece molesta o incómoda con su petición de una comida segura para su hijo.
- Pida a su farmacéutico que compruebe si alguno de los medicamentos de su hijo dispone de cubierta de gelatina.
- Siga un plan de acción contra la alergia. El alergólogo de su hijo se lo puede facilitar. Ese plan lo ayudará a prepararse para, reconocer y tratar una reacción alérgica. Compártalo con cualquier persona que cuide de su hijo (como sus familiares, el personal de la guardería o escuela y sus cuidadores).
¿Qué más debería saber?
A veces, una persona puede desarrollar una alergia a la carne roja sin haber sido picada por una garrapata, aunque esto no sea frecuente. Además, las personas alérgicas a la carne roja pueden volverse más sensibles si les pica más de una garrapata. Para garantizar la seguridad de su familia, protéjala de las garrapatas, lleven manga larga y pantalones largos cuando salgan de excursión, manténgase en el centro de los senderos y comprueben si llevan garrapatas cuando vuelvan a casa.
Los síntomas de la alergia a la carne roja se pueden aliviar con el tiempo o desaparecer por completo. Por lo tanto, es posible que una persona alérgica pueda volver a comer carne roja y productos derivados de los mamíferos al cabo de unos años.
